Organised by Direct Seafoods, CH&co Group and Chalk Stream Trout and held at the Seafood School, Billingsgate, the competition encouraged chefs to create dishes featuring seasonal ingredients.

The participating CH&co chefs designed and created their dishes to compliment the main ingredient, Chalk Stream Trout. The focus was on seasonality and making sure the ingredients enhanced the flavour of the responsibly sourced, fresh Trout. The competition winners received a  trip to Chalk Stream for tastings, a tour of the farm, and the opportunity to go fishing.
