King prawn skewers, served with a pimms salsa 

The strawberry, mint, cucumber combo works really well with chili and the grilled prawns.

Ingredients

  • Frozen raw peeled king prawn skewers - 3 | 08PRASKBP60E3Q - (Each)
  • Diced cucumber - 10g
  • Diced red onion - 5g
  • Sprig of mint - 1
  • Piece of stem ginger - 1/4
  • Diced chili - 2g (red or green)
  • Strawberry - 1 diced
  • Orange segment - 1 diced
  • For the dressing :
  • Dijon mustard - 1 tsp
  • Pimms - 2 tsp
  • Pomace oil - 6 tbsp

1. For the dressing: Whisk mustard & pimms together, add the oil to emulsify

2. Mix together all the fresh veg & fruit and add a little dressing to create the salsa

3. Grill the prawns on both sides and serve with the salsa accompaniment
