Sardines are a small pelagic species that are particularly common in Mediterranean cooking. Very popular for grilling or marinading. this fish is also very high in omega fatty acids, making them extremely healthy eating.

Fire Roasted Sardines

Preparation: 12-15 minutes

Cooking: 10-12 minutes

Serves: 4

Ingredients

  • Whole sardines MSC - x 12
  • Sea salt - 6g
  • Whole black peppercorn - 200g
  • Salted butter - 200g
  • Red chillies - 20g
  • White garlic string
  • Whole lemons - x 3
  • Parsley flat - 15g
  • Chive - 10g

Method

1. Season the sardines with salt and black pepper then grill over BBQ or grill until cooked.

2. In a bowl add the butter, chopped fire roasted chilli, juice and zest from 1 lemon and chopped herbs then blend together with an electric whisk until light and fluffy. Serve with the cooked sardines and caramelised lemon.
